What is White Tea?

When shopping around for Green Tea you might have run into something called White Tea. White tea is an exclusive Chinese tea that is made from very young leaves that have been shaded during their growth. This reduces the oxidization of any of the medicinal ingredients in the tea (the polyphenols and catchetins). Drinking white tea is probably as close as you can get to eating a green tea leaf raw! The highest quality tea is made in the Fujian province of China although other countries produce it now as well.

Green tea is made from more mature tea leaves than white tea that may be withered prior to steaming or firing. White teas are not withered and dried almost immediately after harvesting, sometimes right in the middle of  the growing fields!  It is this minimal processing that may give white tea’s many benefits. Although green tea is also rich in catechins, it may have different catechins than white tea.

One recent study demonstrated that white tea removes or prevents even more tumors from the stomachs of specially bred cancer-susceptible rats than green tea.
