Brewing Matcha Green Tea
 In a previous post I forgot to mention that not all green tea is alike, especially when it comes to brewing powdered teas like matcha.
Matcha is harvested early and isvery high quality sweet tea that has lots of caffeine. After and early harvest and steaming the Matcha leaf is stone ground to afine green powder. The high level of catechins it contains is the result of the very small particle size of the processed leaf. This well known powdery green tea is used in classic green tea ceremonies.
To make it properly.

Pour boiling water into a teapot to pre-warm it and then throw out the water.
Place about 6 grams of matcha in teapot together with boiling water. Stir the contents briskly with a small wisk.
Allow the water to cool.
Pour into cups.

Matcha does not make a second pot. If you want more, start the tea making process from scratch again.
